German Style Muesli

Ingredients

  • 1 cup rolled oats
  • 3 tablespoons toasted wheat germ
  • 3 tablespoons ground flaxseed
  • 5 packets Stevia Extract In The Raw®, or to taste
  • 2 tablespoons chopped hazelnuts
  • 2 tablespoons slivered almonds
  • 1 tablespoon raw, hulled (out of shell) sunflower seeds
  • 1/4 cup raisins
  • 2 tablespoons chopped dates
  • 2 tablespoons chopped dried apricots
  • 1 cup light plain or vanilla soymilk
  • 1 cup nonfat plain yogurt
  • 1 apple peeled, cored and grated

Directions

  1. In medium bowl, combine all grains and Stevia Extract In The Raw with the nuts and dried fruits. Blend well. (This mixture can be made ahead of time and stored in an airtight container.)
  2. When ready to serve combine with soymilk, yogurt and grated apple. Stir to combine.

 

Chickpea Soup

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups peeled and chopped sweet potatoes
  • 3 cups chicken broth
  • 1 bay leaf
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon paprika
  • 1 tomato, chopped
  • 1 (10 ounce) package frozen mixed vegetables
  • 1 (15 ounce) can garbanzo beans, drained
  • salt to taste
  • ground black pepper to taste

Directions

  1. In a saucepan, warm oil over moderate heat. Add onion, garlic, and sweet potatoes; sauté 5 minutes.
  2. Stir in broth, bay leaf, basil, thyme, and paprika. Salt and pepper to taste. Bring to a boil, and then reduce heat to medium low. Cover. Simmer until vegetables are tender but not mushy, about 15 minutes.
  3. Stir in tomato, green beans, and chickpeas. Simmer uncovered until tender, about 10 minutes more. Serve hot.

 

Fabulous Fruit Salad

Ingredients

  • 1 red apple, cored and chopped
  • 1 Granny Smith apple, cored and chopped
  • 1 nectarine, pitted and sliced
  • 2 stalks celery, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts
  • 1 (8 ounce) container nonfat lemon yogurt

Directions

  1. In a large bowl, combine red apple, Granny Smith apple, nectarine, celery, dried cranberries, and walnuts. Mix in yogurt. Chill until ready to serve.

 

Tuna Salad With Fresh Dill

Ingredients

  • 1 (6 ounce) can tuna
  • 1/4 cup diced celery
  • 1/4 cup chopped fresh dill weed
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons thinly sliced green onion
  • 2 tablespoons fat-free mayonnaise
  • 2 tablespoons plain low-fat yogurt
  • 1/2 teaspoon prepared Dijon-style mustard

Directions

  1. In a small bowl, mash tuna with juices from can. Add celery, dill, parsley, chives, mayonnaise, yogurt, and mustard; mix well.
